Baked Apple Walnut Oatmeal

Baked Apple Walnut Oatmeal packed with healthy oats, apples, cranberries, and walnuts. This delicious baked oatmeal is seen everywhere in Pennsylvania Dutch Country. Many of the bed and breakfasts and restaurants in the area have this on their breakfast menu. If you have never had baked oatmeal before, you are in for a treat! This unexpected morning treat is a mix between an oatmeal bar and traditional creamy breakfast oatmeal. This recipe comes from  Cooking Light, so you know it has to be good! 🙂

Baked Apple Walnut Oatmeal

Ingredients:

  • 2  cups  uncooked quick-cooking oats
  • 1/2  cup  packed brown sugar
  • 1 teaspoon  cinnamon
  • 1/3  cup  cranberries
  • 1  tablespoon  chopped walnuts
  • 1  teaspoon  baking powder
  • 1 1/2  cups  fat-free milk
  • 1 teaspoon  vanilla extract
  • 1 apple, grated
  • 2  tablespoons  butter, melted
  • 1  large egg, beaten
  • Cooking spray
Directions:

  1. Preheat oven to 375° F.
  2. In a large bowl, combine oats, brown sugar, cinnamon, cranberries, walnuts, and baking powder; set aside.
  3. In a small bowl, combine the milk, vanilla, grated apple, butter, and egg. Add milk mixture to oat mixture; stir well. Pour oat mixture into an 8-inch square baking dish coated with cooking spray.
  4. Bake at 375° for 20 minutes. Serve warm.

    What would happen if I used old fashioned oats instead??

      Old-fashioned and quick oats can be used interchangeably in recipes. Just keep an eye on it while it is baking, I would add about 10 more minutes to the cook time. The texture will be slightly different, but I am sure it will still be delicious! Let me know how it turns out! 🙂

        I made the oatmeal for company on the weekend. I prepared it and then let it sit for an hour while we ate so it ended up a little soggy. I’m guessing because I let it sit with the milk. Other than that, it was great – not too sweet and hearty breakfast or good dessert with ice cream.

        Did you mix all the ingredients together and then let it sit for an hour? With this to get the best texture, I would place it in the oven as soon as you add the wet ingredients. You could also try baking it a little longer than I suggested, that would help with it being a little soggy.

        Yes, I did mix and then let it sit so that’s where I went wrong. I will try it again though because I like the taste. Is it supposed to be crunchy or just baked?

        Let me know how it turns out for you. This is one of my favorite breakfasts. It also reheats very well…just place it in a 350 degree oven 10-15 minutes. I make this on Sunday morning and eat the leftovers during the work week. The texture is not crunchy, it is somewhat solid. When you cut into it, it will hold its shape.

      I have made this many times on a Sunday morning, refrigerated it and eaten it throughout the weekday before, but it has never lasted long enough to freeze. I am not sure if it would freeze very well since it is not a stiff breakfast bar and is best eaten with a fork. That being said, if you give it a try let me know how it turns out for you. This is one of my favorite fall breakfasts! 🙂

    I made this twice in the past week! My family loved it (we have never had baked oatmeal before). The first time, I made it just as the recipe states. The second time, I added a can of peaches (chopped into little pieces) and everyone loved that addition. Thanks!
