Caramel Popcorn

Warning-this stuff is delicious and highly addicting! I found this recipe over eight years ago on and having never made my own caramel corn it moved to the very top of my “must make this instant” list. The rest is history and I have been making it every year for the past eight christmas’ for family and friends. Give this recipe a try and I am sure you will agree-it is the best homemade caramel corn ever! 🙂

Caramel Popcorn

  • 1 cup butter
  • 2 cups light brown sugar
  • ½ cup corn syrup
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 5 quarts popped popcorn


  1. Preheat oven to 250 degrees F. Place popcorn in a very large bowl.
  2. In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour over popcorn, stirring to coat.
  3. Place caramel popcorn in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely then break into pieces.

    This sounds great— just what we need for this weather!!! Makes looking forward to a “wintery mix” Mon and Tues., with my grands fun. Board games, cards, carmel popcorn, mmmmm!!!

    I made caramel popcorn for Christmas too. I gave it to my parents along with some DVDs for a movie themed gift. It was a lot of fun. Seeing this I kind of want to make some more 🙂
